Deux Amis is the brainchild of
Lenworth Gordon, a Jamaican, who sought to provide its clients with
pleasurable eating reminiscent of the post medieval period in France, when
exotic seasonings were replaced by indigenous herbs, onions, shallots, garlic,
recambole, mushrooms, truffles etc. Sauces became less acidic and flavors
became more subtle and smooth.
The different geographic and climatic makeup of France dictated almost equally the variety of cultures affecting its cuisine. Yet, the consistency maintained is because the French predilection for fine cooking never faltered.
Entré Deux Amis in the tradition of French colonial Caribbean Countries have mimicked the French tradition for fine cooking using herbs and spices indigenous to that region. There are many cultures in the Caribbean and equal variety of cuisines reflecting the regions and their inhabitants.
We have noted the culinary transformation of French cuisine adopting the zeal of French Chef's vying for notoriety in the many courts of aristocrats and more importantly the families of the hard working French determined to bring the freshest, most wholesome ingredients to desired splendid cuisine.
